8 Can Taco Soup

This is a Pinterest recipe of course. It is from Six Sister’s Stuff (  It was delicious!
I didn’t make it in the crockpot, and I didn’t have ALL the cans…but it was still super easy and SO flavorful.  Here’s what I did:

For the soup:
1 can corn
1 can black beans (drained/rinsed)
1 can pinto beans
1 can chicken (drained)
1 can green enchilada sauce
1 can dice fire roasted tomatoes
32 oz chicken broth
1 packet taco seasoning
For serving (optional):
Tortilla chips
Green onions

(Basically I didn’t have the cream of chicken soup. But I also used the fire roasted tomatoes and the next day this was even better, and it had a slight kick! YUM!)

This was so fast, and I was a little nervous about using canned chicken, but honestly, I couldn’t even tell! I put this all in a stock pot on the stove and let it simmer for about an hour before eating it. I like to add tortilla chips, cheese, and green onions when serving. Not only is it delicious, but it’s pretty too!
