Lemon Butter Salmon & Red Potatoes

Last night I cooked baked salmon with red potatoes and steamed broccoli. It was DELICIOUS! And healthy!


Here’s what I did:

Salmon fillets:


Lemon Juice

Basil (if you have fresh herbs, even better)




Melt the butter and add lemon juice and herbs. Try not to get TOO many herbs, you still want to taste the lemon and salmon. Using a knife, cut SLIGHTLY into the fillets in a criss-cross pattern. Pour butter mixture over the salmon making sure to penetrate into the cuts for added moisture and flavor. Bake at 400 degrees for 20 minutes. Very moist and full of flavor!

Ingredients needed:

Melt the butter and add herbs and lemon juice:

Put the fillets in a baking dish:

Cut criss-crosses in the fillets:

Pour melted butter mixture over fillets:

Bake at 400 degrees for 20 minutes

Now for the red potatoes:



Salt Pepper

Italian Seasoning (I wanted Rosemary, but didn’t have any)

Wash and cut potatoes into cubes. Melt butter and pour over the potatoes. Season with salt, pepper, and Italian seasoning or rosemary. Bake at 400 for 30+ minutes. Be sure they are tender!

Melt butter, pour over potatoes, sprinkle with seasonings
