Meatball Stroganoff

Ok, so Josh does NOT like beef stroganoff. I’ve made it once since we’ve been married, and he definitely let me know, please don’t make this again.  So I haven’t, but I LOVE stroganoff. I thought I would give this recipe a try and see if he would like it. Well he LOVED it!! SUCCESS!! Will definitely make this one again, so check it out.

What you need:

2 cups of Beef Broth
Olive Oil
Italian style meatballs (frozen)
Seasonings (Oregano, Parsley, Basil)
Half & Half or Heavy Cream
8 oz Sour Cream
Noodles (I use No Yolk)
Start with your frozen meatballs. Use enough for everyone eating. Cook/Brown them in the olive oil. Don’t forget to start your water for the noodles!
Once the meatballs are browned, add 2 cups of beef broth and bring to a boil. Go ahead and add your seasonings to get the flavor going.

Let the broth and seasonings boil for about 5 minutes. Add 1 cup of half & half, or heavy cream.  Allow that to continue boiling for about 5 minutes, so it can thicken. If you use half & half, you might need to add a tablespoon of flour to help it thicken. Continue stirring frequently.

Once it is almost as thick as you would like it, add the 8 oz of sour cream. Once this is stirred in, you’re ready to eat!
Serve on top of noodles, and it’s pure deliciousness!
