Potato Soup


This recipe is actually from Trisha Yearwood’s cookbook. It is absolutely delicious! However, if you’re on a diet…probably had better look for a different recipe. This is what I call REAL ingredients. Nothing fake.
This is what you need:
4 large baking potatoes
6 slices of bacon
2/3 cup butter (1 1/3 sticks)
2/3 cup flour
6 cups of milk
3/4 teaspoon salt
1/2 teaspoon pepper
2 green onions, finely chopped
5 oz cheddar cheese, shredded
8 oz sour cream
Start out by baking your potatoes. I cheated a little bit on this by using the microwave potato express bag. It works!
While your potatoes are baking, cook the bacon and chop the green onions. Be sure to cook a little extra for topping, and for munching. Mmmm bacon!



Once your potaoes are done baking, slice them in half, and spoon the flesh into the soup, if you’re ready for it, or into a prep bowl.



Let’s start on the soup!
Start by melting the butter in a large saucepan.



Add the flour and stir until smooth (about 1 minute).



Once the flour/butter is smooth, add the milk slowly, stirring constantly.  Continue to stir until the mixture thickens and is about to bubble.



Add the  potatoes, salt, pepper, green onions, bacon, and cheese – stirring after each addition.  Allow to heat thoroughly.






Add the sour cream just before serving.



Top your bowl with cheese, green onions, and bacon for garnish – and a little added flavor.
