Now I know not everyone likes spinach, but these were really good! I will admit though, they are a bit time consuming. Not horribly, but to add filling to each noodle and roll it does take a little bit of time.
Here’s what you will need:
Spinach (10 oz frozen or fresh)
Chicken (if desired)
Preheat your oven to 400 degrees. I used fresh spinach, and my recommendation for that, is to cook it BRIEFLY so it will be somewhat wilted.
Chop your fresh spinach (and cook briefly).
Add the container of Ricotta.
Add your mozzarella, Parmesan, and egg.
Add all of your seasonings.
Add the chicken and stir.
Place a thin layer of filling on each noodle and roll from end to end.
Place them all in a greased 9×13 casserole dish.
Top with your favorite spaghetti sauce. Bake 20-30 minutes at 400 degrees.
Add a little cheese on top for garnish and enjoy!
