Week 3 of Our 30 Day Challenge

The workouts this week were basically non-existent. I should have picked a less busy time to commit to this plan, but I didn’t.  Here is our menu for the week:



Breakfast: Oatmeal w/ blueberries and almonds (flat belly diet)

Lunch: Progresso Light soup, 1 slice toast, protein meal bar

Snack: yogurt, strawberries, semi-sweet chocolate chips, peanuts (flat belly diet)

Dinner: Subway



Breakfast: Cheerios with mixed berries and coconut milk

Lunch: Turkey Avocado Wrap

Snack: protein bar

Dinner: Leftover grilled chicken, veggies



Breakfast: 3 scrambled eggs with 1 English muffin and applesauce

Lunch: Hummus pita

Snack: Fruit salad with yogurt

Dinner: Subway



Breakfast: Waffle with 1 tbsp. syrup, banana, and pecans

Lunch:   Healthy Choice with brown rice and cheese stick

Snack: protein bar

Dinner: Subway


Friday (2 mile walk)

Breakfast: Cheerios with coconut milk, banana, pecans

Lunch: Panera Chicken Strawberry Poppy seed Salad

Snack: mixed nuts, strawberries, pineapple, grapes

Dinner: Grilled Chicken Burgers, broccoli, green beans, long grain wild rice



Breakfast: 2 scrambled eggs, 2 slices of toast, strawberry/mango smoothie

Lunch: Waffle with 1 tbsp. syrup, banana, and pecans


Dinner: Grilled Crappie, green beans, asparagus, beans



Breakfast: Oatmeal with banana, pecans, cinnamon, 2 eggs over medium

Lunch: ½ Panera Chicken Strawberry Poppy seed Salad, ½ Turkey avocado BLT

Snack: SkinnyPop popcorn

Dinner: Subway

A few of this weeks items came from the Flat Belly Diet book that we have.  For the most part we simply try to eat a filling, healthy, 400 calories for each meal.

Monday and Wednesday I had finals, so I didn’t get home until late, but I did get A’s in both classes! Tuesday was the only day that I got to do the workout. Thursday, Josh and I met with a financial advisor – gotta prepare for retirement, life insurance, etc. Friday I had to make a QUICK trip to Oklahoma City to pick up a textbook for a class I enrolled in 2 days after it started. Then I went to my grandma’s Mother’s Day Tea at her retirement facility. Josh and I did take the dogs for a 2 mile walk though!  Saturday I did my homework for the new class, had dinner with my parents, aunt Linda, and grandma at my parents house. They had fried crappie, hushpuppies, coleslaw, asparagus, beans, pound cake, ice cream, strawberries. That was hard to turn down, but we managed. Sunday was Mother’s Day, we went to church with Josh’s parents, then ran errands in Owasso, and had dinner with Josh’s parents.  It was a busy, family filled weekend. LOVE those weekends!
