Summer Spaghetti

Here’s another recipe I found on Pinterest!  It was perfect for using my fresh cherry tomatoes!

Here’s what you need:

  • Spaghetti noodles
  • 1 lb chicken breast
  • Grated parmesan cheese
  • Cherry tomatoes

 

  • Marinade:
  • 2 tsp chopped fresh thyme
  • 2 tsp chopped fresh rosemary, or 1 tsp dried
  • Juice from 1/2 a lemon
  • 2 Tbs olive oil
  • 1 tsp coarse salt
  • 1/2 tsp cracked pepper
  • Olive oil for sautéing the chicken

 

  • Garlic Sauce:
  • 1/2 stick butter (unsalted)
  • 2 Tbs olive oil
  • 4 cloves finely minced garlic
  • 2 Tbs flour
  • 2 1/2 cups chicken broth
  • 1 Tbs fresh chopped basil
  • Salt/Pepper to taste

Marinade the chicken for at least 30 minutes. I chopped the chicken into 1 inch cubes, to help absorb, for easy eating, and quicker cooking.

Once you’ve marinated the chicken, sauté over medium heat until done.

Cook your spaghetti.

To make the garlic sauce:

  • Melt butter over medium heat, and add the olive oil.
  • Sauté the garlic until soft and fragrant.
  • Stir in the flour, removing any clumps
  • Add the chicken broth and simmer until thick, add basil
  • Season with salt/pepper
  • Add the chicken
  • Toss with cooked spaghetti

Top with grated parmesan cheese and sliced cherry tomatoes.
