Ok…if you like salmon…you’re going to love this recipe! Yes, it’s grilled, but it’s not done outside. We have a charcoal grill, but after Josh gets home from a long day at work, cooking is definitely the last thing he wants to do. Heck…it’s the last thing he ever wants to do! I love being in the kitchen, Josh on the other hand…would rather be outside working on the land, or tinkering in the shed. No, we don’t have a gas grill. Why? Because, as Josh would say, I’m a food snob. A gas grill doesn’t give the same flavor as a charcoal grill. Does that mean the food can’t still be good? Of course not! For me, it just means that I don’t want to spend the money on a grill that I won’t really enjoy. Maybe if we have money that needs to be spent when we add on to our house, or build and I get an outdoor kitchen…because let’s be honest…a gas grill is much faster to heat up, and is a lot less messy…
Anyways…let’s get back to this salmon. Before, I was buying the pre-packaged, frozen salmon filets. They’re ok, but they always seemed to have a different texture than fresh salmon. So, Sprouts had their salmon filets on sale for $5.99/lb. So I bought 2 slabs, cut them into the appropriate portion sizes, and froze them…well would ya look at that…frozen, pre-packaged salmon!
It’s perfect…I just grab a Ziploc baggie that has 2 filets in it, put it in the fridge to thaw while we’re at work, and it’s ready to be cooked when I get home. There are 2 seasonings that create the best combination EVER! Slap Ya Mama and lemon pepper. That’s it! Sprinkle those on both sides, and toss it on the grill.
Oh wait…the grill! I use a Calphalon grill pan, and grill them inside. I do put a little bit of butter or oil on the pan to help keep it from sticking, but that’s all!
I promise you won’t be disappointed!! Josh asked for them again the next day! But we have both agreed, there is a BIG difference in the frozen pre-packaged salmon from the freezer section and buying fresh salmon to portion out yourself. I PROMISE!
Here’s what you need:
- Butter/Oil to prevent sticking (if grilling on a pan)
- Lemon Pepper
- Slap Ya Mama
* We also roasted the broccoli/cauliflower. Drizzle with olive oil, sprinkle with sea salt and pepper, and place in the oven at 400 degrees for 15-20 minutes.
*And that is Uncle Ben’s Ready Rice – Quinoa and Brown Rice
